While there are still doubts about our peaches, our spring strawberries have not been hurt by our unusual weather, so let’s enjoy them!

I have always loved strawberries since picking them with my grandmothers growing up. I love the way they smell, which may be because they are a member of the rose family. Besides their aroma and taste, they have excellent health benefits. My most favorite of their virtues…

  • They are filled with fiber and vitamin C
  • They boost cognitive and memory ability
  • They reduce cholesterol

There are so many wonderful ways to enjoy this healthy sweet fruit. A new friend just shared a recipe that I thought you may enjoy. I met Barbara Justice when she entered her precious poodle in a doggie contest I was judging to raise money for one of my favorite rescues C.A.R.E. (Cliffords Army Rescue Extravaganza).

Barbara’s beautiful poodle Liesel won the canine contest for her style. I was told by several attending the event that Barbara is an amazing cook. She kindly shared a favorite recipe for Strawberry Soup that she first enjoyed at the Grand Floridian Resort at Disney World, but I am now calling it Liesel’s Strawberry Soup because it matches her adorable dog’s pink color. Enjoy this delicious seasonal soup for breakfast or any time.
