- 2 sweet potatoes (about 1 pound), sliced
- 1 head cauliflower cut into florets
- 2 cups brussels sprouts halved
- 4 tbsp apple jelly
- 4 tbsp butter
- 1/4 tsp salt
- 1/8 tsp pepper
- Place the vegetables in a greased baking dish. Combine the jelly, butter, salt and pepper in a microwave-proof bowl. Microwave until jelly and butter are melted. Stir in salt and pepper. Mix well and pour over vegetables. Bake at 400 degrees about 40 minutes or until until vegetables are tender.
