This week is the anniversary of my father’s final fishing trip to Alaska.
I treasure this photo taken of him with his catch of the day only six weeks before he went to heaven. He had cancer, but was not about to miss a trip to his favorite place: on a boat in Alaska fishing for halibut.
A medical team had to get him home, but he made that trip and caught that fish. His zest for life influenced mine profoundly. I still have his tackle box from this trip in my garage.
Since heaven is a perfect place, I bet he is on a boat fishing right now. Daddy not only liked to catch fish, he loved cooking them.
In honor of him, I share one of his most favorite halibut recipes. I updated it from one of my earlier cookbooks.

I love how you put names with recipes. This one of you Dad is fabulous. I was recently visiting my son and family. He was telling me how his son,8, loves Mexican dishes. Then said, “I am sure you remember how to make MikeMckay’s Tamale Pie.” My jaw dropped. He loved that dish. So shocked how that must have resonated with him as a child!! No I can’t find the recipe. 🙃 Keep’um coming!
