This colorful fall side dish stars one of my most favorite seasonal vegetables, sweet potatoes. They are actually one of the world’s healthiest foods, filled with vitamins A, C, B6, B1 and B2.
The side-kick in this dish, brussels sprouts, are also rich in many valuable nutrients. I know they aren’t the most loved vegetable in the world, but try them this way. You may like them.
If not, just leave them out and use more sweet potatoes. This dish also goes great with our Apple Glazed Pork Roast from yesterday, too. Enjoy!
