It is such a treat for me when people stop to tell me how they have been using recipes for years that I shared on my TV show. That happens more often this time of year when people are more focused on food, especially family and friend favorites.

This week, several people have mentioned a recipe so many times that I think it bears sharing again here: my Chocolate Éclair Cake.

Besides being a delicious, very easy-to-prepare dessert, it is a favorite for the holidays because it is so versatile. It’s perfect for a family gathering, an office party or to take to a neighborhood Christmas party. And yes, easy enough to prepare last minute for a “Friendsgiving” this week.

Combine the milk and pudding. Beat until thick. Fold in Cool Whip. Layer a 9 X 13-inch pan with graham crackers. Add a layer of pudding. Continue adding layers of graham crackers and pudding mix, ending with a graham cracker layer.

Bring cocoa, evaporated milk and sugar to a boil. Stirring constantly. Cool for 1 minute.  Stir in butter until melted. Add vanilla. Pour over cake. Refrigerate overnight. Cut into squares to serve.
