Crispy Baked Parmesan Chicken

My family loves this chicken recipe so much that they ask for this instead of turkey at Thanksgiving, but it's easy enough for a weeknight supper.
Prep Time 30 minutes
Cook Time 2 hours

  • 1 stick butter
  • 1 tsp minced garlic
  • 1 tsp dry mustard
  • 1 tsp Worcestershire sauce
  • 1 cup Panko crumbs
  • 3 oz French-fried onion rings
  • 1/2 cup Parmesan cheese
  • 1/2 cup parsley chopped

Instructions

  • In a saucepan, melt the butter and stir in the garlic, dry mustard and Worcestershire sauce. Stir about 1 minute and remove from heat.
  • In a mixing bowl, combine the Panko crumbs, Parmesan, onion rings and parsley,
  • Roll each chicken breast in the butter mixture and then the crumbs mixture. Place in a baking dish. Drizzle any leftover butter mixture over the chicken.
  • If time is an issue, bake uncovered at 350 degrees for 1 hour or until chicken is completely done (Chicken breasts vary in size so test for doneness by cutting into it. If you have time, ma favorite way to bake this is to cover it with foil and bake at 300 degrees for 2 hours. Remove the foil and bake until browned and crispy, about 20 to 30 more minutes.
